Make flavorful garlic butter rice quickly. This simple side dish uses basic ingredients like white rice, butter, fresh garlic, and chicken broth for a rich, savory taste ready in under 30 minutes.

  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves fresh garlic, minced
  • 1 small yellow onion, finely chopped
  • 1 1/2 cups long grain white rice, uncooked
  • 2 1/2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil and 2 tablespoons of the butter in a medium saucepan over medium heat.
  2. Add the chopped onion and cook until soft, about 3 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
  4. Add the uncooked rice to the saucepan and toast, stirring constantly, for 2 minutes until the edges of the grains look slightly translucent.
  5. Pour in the chicken broth, salt, and pepper. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan tightly, and simmer for 15 to 18 minutes, or until all the liquid is absorbed. Do not lift the lid during this time.
  7. Remove the saucepan from the heat and let it stand, covered, for 5 minutes.
  8. Remove the lid. Add the remaining 2 tablespoons of butter and fluff the rice gently with a fork.
  9. Stir in the fresh parsley before serving.

Notes

  • For fluffier rice, rinse the uncooked rice under cold water until the water runs clear before toasting it in step 4.
  • This rice pairs well with grilled chicken, steak, or roasted vegetables.
  • You can substitute vegetable broth for chicken broth if you prefer a vegetarian option.
