  • 1 cup chopped pecans
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 can (15 ounces) pure pumpkin puree
  • 1 can (14 ounces) sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 container (8 ounces) frozen whipped topping, thawed (for topping)

Instructions

  1. Preheat your oven to 350 degrees F. Lightly grease a 9×13 inch baking dish.
  2. In a medium bowl, combine the dry yellow cake mix and chopped pecans. Pour the melted butter over the mixture and toss with a fork until the mixture resembles coarse crumbs.
  3. Press about two-thirds of this crumb mixture evenly into the bottom of the prepared baking dish. This forms your base layer.
  4. In a separate bowl, whisk together the pumpkin puree, sweetened condensed milk, eggs, cinnamon, nutmeg, and vanilla extract until smooth. This is your creamy pumpkin filling.
  5. Pour the pumpkin filling mixture evenly over the crust layer in the baking dish.
  6. Sprinkle the remaining one-third of the cake mix and pecan crumb mixture evenly over the pumpkin filling.
  7. Bake for 45 to 55 minutes, or until the topping is golden brown and the center is mostly set. A toothpick inserted near the center should come out mostly clean.
  8. Let the dessert cool completely on a wire rack, about 1 to 2 hours.
  9. Once cooled, spread the thawed whipped topping evenly over the top layer.
