Make these Easy Zucchini Pizza Bites for a quick, low-carb snack or appetizer. They satisfy pizza cravings using zucchini as a base and bake up crispy and cheesy in under 30 minutes.

  • 2 medium zucchini
  • 1 teaspoon salt, divided
  • 1 large egg, lightly beaten
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup almond flour (for low carb/keto)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 cup pizza or marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • Optional toppings: mini pepperoni, sliced olives

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. If using an air fryer, preheat to 375°F (190°C) and lightly spray the basket.
  2. Wash and trim the ends of the zucchini. Slice the zucchini into rounds about 1/4 to 1/3 inch thick.
  3. Place the zucchini slices on a paper towel-lined plate. Sprinkle evenly with 1/2 teaspoon of salt. Let them sit for 10 minutes to draw out excess moisture. This step is key for crispy zucchini bites.
  4. Gently pat the zucchini slices very dry with more paper towels. You must remove as much water as possible.
  5. In a medium bowl, combine the beaten egg, Parmesan cheese, almond flour, oregano, garlic powder, and the remaining 1/2 teaspoon of salt and pepper to taste. Mix well.
  6. Add the dried zucchini slices to the bowl and toss gently until all slices are lightly coated with the mixture.
  7. Arrange the coated zucchini slices in a single layer on the prepared baking sheet or in the air fryer basket, ensuring they do not overlap.
  8. Bake in the oven for 12-15 minutes, flipping halfway, until the edges start to look golden brown. (If air frying, cook for 8-10 minutes, flipping halfway).
  9. Remove the partially cooked zucchini bases from the oven/air fryer. Top each slice with about 1/2 teaspoon of pizza sauce, followed by mozzarella cheese and any desired toppings like pepperoni.
  10. Return the bites to the oven or air fryer. Bake for another 3-5 minutes, or until the cheese is melted and bubbly.

  • For the crispiest results, squeeze the grated zucchini very hard in a clean kitchen towel after salting to remove maximum liquid before mixing with the binder.
