Ingredients
Scale
4 cups frozen watermelon chunks
1/2 cup frozen strawberries
1/2 cup coconut water (or more, for thinner consistency)
1 tablespoon fresh lime juice
4 fresh mint leaves (optional)
Instructions
Place the frozen watermelon chunks, frozen strawberries, coconut water, and lime juice into your blender.
Add the mint leaves, if you are using them for extra flavor.
Secure the lid and blend on high speed until the mixture is completely smooth and creamy. Stop and scrape down the sides if needed.
If the smoothie is too thick, add coconut water one tablespoon at a time until you reach your desired texture.
Pour immediately into glasses and serve this healthy fruit smoothie right away.
Notes
For a thicker, almost sorbet-like texture, use only frozen watermelon and skip the extra liquid initially.
To make this a complete post workout hydration drink, add one scoop of your favorite vanilla or unflavored protein powder.
This recipe is naturally vegan and dairy-free. For a creamier texture, you can substitute 1/4 cup of the coconut water with plain Greek yogurt (if not keeping it vegan).
