Easy Tomato Basil Soup

A smooth and flavorful homemade tomato soup, perfect for a cozy meal or a light lunch.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil leaves, chopped
  • 1 teaspoon sugar
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in crushed tomatoes, vegetable broth, and sugar. Bring to a simmer.
  4. Reduce heat and let simmer for 15 minutes, stirring occasionally.
  5. Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
  6. Return the soup to the pot. Stir in heavy cream and fresh basil.
  7. Heat gently until warmed through, do not boil.
  8. Season with salt and pepper to taste.

Notes

  • For a richer flavor, you can roast the tomatoes before making the soup.
  • Serve with a grilled cheese sandwich for a classic pairing.
  • Garnish with extra fresh basil or a swirl of cream.
