- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 4 cups vegetable broth
- 1/2 cup heavy cream
- 1/4 cup fresh basil leaves, chopped
- 1 teaspoon sugar
- Salt and black pepper to taste
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in crushed tomatoes, vegetable broth, and sugar. Bring to a simmer.
- Reduce heat and let simmer for 15 minutes, stirring occasionally.
- Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
- Return the soup to the pot. Stir in heavy cream and fresh basil.
- Heat gently until warmed through, do not boil.
- Season with salt and pepper to taste.

- For a richer flavor, you can roast the tomatoes before making the soup.
