A quick and easy tofu broccoli stir fry with a savory sauce, perfect for a weeknight meal.

Ingredients

Scale
  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 1 tablespoon cornstarch
  • 2 tablespoons soy sauce, divided
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 head broccoli, cut into florets
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon maple syrup
  • 1 teaspoon rice vinegar
  • Cooked rice or noodles, for serving

Instructions

  1. In a bowl, toss the pressed tofu cubes with cornstarch and 1 tablespoon of soy sauce.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add tofu and cook until golden brown and crispy on all sides. Remove tofu from skillet and set aside.
  3. Add broccoli florets to the skillet and stir-fry for 3-4 minutes until crisp-tender.
  4. Add minced garlic and grated ginger to the skillet and cook for 30 seconds until fragrant.
  5. In a small bowl, whisk together the remaining 1 tablespoon of soy sauce, sesame oil, maple syrup, and rice vinegar to create the sauce.
  6. Return the crispy tofu to the skillet with the broccoli. Pour the sauce over the tofu and broccoli.
  7. Stir everything together to coat evenly and cook for 1-2 minutes until the sauce has thickened slightly.
  8. Serve immediately over cooked rice or noodles.

Notes

  • For extra crispy tofu, you can air fry or bake the tofu cubes after coating them in cornstarch until golden brown.
  • Blanching the broccoli before stir-frying can ensure it is tender-crisp.
  • Adjust the sweetness and saltiness of the sauce to your preference.
  • This recipe is easily adaptable for meal planning.
