  • 1 cup pecans or other nuts (optional)
  • 1 cup pretzel twists or sticks (optional)
  • 1 cup (2 sticks) unsalted butter
  • 2 cups packed light brown sugar
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 cup chocolate chunks or chips (optional)

Instructions

  1. Preheat your oven to 250 degrees Fahrenheit. Line two large baking sheets with parchment paper.
  2. In a very large bowl, combine the Chex cereal, pecans, and pretzels if you are using them. Set aside.
  3. In a medium saucepan, combine the butter, brown sugar, and corn syrup. Heat over medium heat, stirring constantly until the butter melts and the mixture comes to a full rolling boil. Boil without stirring for exactly one minute.
  4. Remove the saucepan from the heat immediately. Stir in the vanilla extract and baking soda quickly. The mixture will foam up.
  5. Pour the hot toffee mixture evenly over the cereal mixture in the large bowl. Gently stir with a large rubber spatula until the cereal is completely coated. Work quickly.
  6. Spread the coated cereal mixture in a single layer onto the prepared baking sheets.
  7. Bake for 45 minutes, stirring the mixture every 15 minutes to prevent burning and ensure even crisping.
  8. Remove from the oven. If you are using chocolate chunks, sprinkle them evenly over the hot mix immediately. Let the mix cool completely on the baking sheets without stirring. The toffee will harden as it cools.
  9. Once completely cool, break the mix into pieces. Store in an airtight container.
