Ingredients

Scale
  • 2 cups cooked, shredded chicken
  • 1 head Napa cabbage, thinly sliced
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1/2 cup chopped cilantro
  • 1/4 cup chopped mint
  • 1/4 cup chopped peanuts, for topping
  • For the Peanut Dressing:
  • 1/2 cup creamy peanut butter
  • 1/4 cup warm water
  • 3 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 teaspoon sriracha (optional)

Instructions

  1. Prepare the dressing: In a small bowl, whisk together the peanut butter, warm water, soy sauce, rice vinegar, honey, sesame oil, ginger, garlic, and sriracha until completely smooth. Add more warm water, one teaspoon at a time, if you need a thinner consistency.
  2. Prepare the vegetables: In a large bowl, combine the shredded cabbage, carrots, red bell pepper, cilantro, and mint.
  3. Add the chicken: Add the cooked, shredded chicken to the large bowl with the vegetables.
  4. Dress the salad: Pour about three-quarters of the peanut dressing over the chicken and vegetable mixture. Toss everything gently until the salad is evenly coated. Add more dressing if needed.
  5. Serve: Divide the salad among serving bowls. Top each serving with chopped peanuts before you serve.

Notes

  • You can cook the chicken ahead of time using an Instant Pot or by poaching it on the stovetop for fast assembly.
  • For a low-carb chicken salad option, skip any added sugar in the dressing and use only non-starchy vegetables.
  • This salad holds up well for meal prep; store the dressing separately and toss just before eating to maintain maximum crunch.
