Make this quick, hearty dinner using thick, buttery Texas toast and a cheesy ground beef filling. Toasting the bread correctly prevents sogginess and creates a satisfying base for this family favorite.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 1/2 cup water
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • 8 slices Texas Toast (frozen or fresh)
  • 4 slices cheddar cheese (or cheese of choice)
  • 1 tablespoon butter (for toasting)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and chopped onion. Cook, breaking up the meat, until the beef is browned and the onion is soft. Drain off any excess grease.
  2. Stir in the water, ketchup, brown sugar, Worcestershire sauce, mustard, and chili powder. Mix well.
  3. Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 10 minutes, stirring occasionally, to allow the sauce to thicken slightly. Season with salt and pepper.
  4. While the meat simmers, prepare the Texas Toast. Spread a thin layer of butter on one side of each slice of toast.
  5. Place the toast, butter-side down, in a separate large skillet or on a griddle over medium heat. Toast for 2-3 minutes until golden brown and crisp. Remove from heat.
  6. Place one slice of cheese on four of the toasted slices. Spoon the hot sloppy joe mixture evenly over the cheese. Top with the remaining four slices of toast to make sandwiches.
  7. For extra melted cheese, you can place the open-faced sandwiches (meat on toast) under the broiler for 1-2 minutes until the cheese melts, then close the sandwich. Serve immediately.

Notes

  • To prevent sogginess, make sure you toast the Texas Toast until it is golden brown and firm before adding the meat mixture.
  • If you prefer a thicker sauce, remove the lid during the last 5 minutes of simmering.
  • Add sliced dill pickles on top of the meat mixture before closing the sandwich for extra flavor.
  • You can substitute ground turkey or chicken for ground beef if desired.
