1 cup sweet potato puree (about 1 medium sweet potato)
1/2 cup melted coconut oil or butter
1 cup maple syrup or honey
2 large eggs
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
1/2 cup almond flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips (optional)
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
In a large bowl, whisk together the sweet potato puree, melted coconut oil, maple syrup, and eggs until smooth. Stir in the vanilla extract.
Add the cocoa powder, almond flour, baking soda, and salt to the wet ingredients. Mix until just combined. Do not overmix.
Fold in the chocolate chips, if using.
Pour the batter into the prepared baking pan and spread evenly. Sprinkle a few extra chocolate chips on top.
Bake for 25 to 30 minutes. The brownies are done when a toothpick inserted near the center comes out with moist crumbs attached, but not wet batter.
Let the brownies cool completely in the pan before lifting them out using the parchment paper overhang. Cut into squares.
Notes
For the best fudgy texture, allow the brownies to cool completely before slicing.
To make this recipe flourless, substitute the almond flour with an equal amount of extra cocoa powder and a tablespoon of flax egg mixture (1 tbsp ground flaxseed + 3 tbsp water).
Sweet potato puree should be smooth; steam or roast the sweet potato until very soft, then mash thoroughly.
