  • 1 pound pork loin, cut into 1-inch cubes
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying
  • 1 cup pineapple chunks, drained
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch pieces
  • 1/2 cup ketchup
  • 1/4 cup white vinegar
  • 1/4 cup granulated sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. In a bowl, toss pork cubes with flour, salt, and pepper.
  2. Dip pork cubes in beaten eggs, then coat with panko breadcrumbs.
  3. Heat 2 inches of vegetable oil in a large skillet or wok over medium-high heat to 350°F (175°C).
  4. Fry pork in batches until golden brown and cooked through, about 5-7 minutes. Remove pork and drain on paper towels.
  5. In a small bowl, whisk together ketchup, white vinegar, sugar, and soy sauce.
  6. In a separate small bowl, whisk together cornstarch and water to create a slurry.
  7. Pour the sauce mixture into a clean skillet or wok over medium heat. Bring to a simmer.
  8. Stir in the cornstarch slurry and cook until the sauce thickens, about 1-2 minutes.
  9. Add pineapple chunks and bell pepper pieces to the sauce. Cook for 2-3 minutes until peppers are tender-crisp.
  10. Return the fried pork to the skillet and toss to coat evenly with the sauce.
  11. Serve immediately over rice.

  • For extra crispy pork, ensure the oil is hot enough before frying.
  • Adjust sugar and vinegar to your preference for sweetness and tanginess.
  • You can add other vegetables like onions or carrots.
