Ingredients

  • 1 pound white mushrooms, stems removed
  • 1 tablespoon olive oil
  • 1/2 cup finely chopped yellow onion
  • 2 cloves garlic, minced
  • 4 ounces cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup panko breadcrumbs
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wipe the mushroom caps clean with a damp cloth.
  3. Heat olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  4. Add the minced garlic and cook for 1 minute more until fragrant. Remove from heat.
  5. In a medium bowl, combine the softened cream cheese, Parmesan cheese, panko breadcrumbs, chopped parsley, salt, and pepper.
  6. Stir in the cooked onion and garlic mixture until well combined.
  7. Spoon the filling evenly into each mushroom cap, pressing gently.
  8. Arrange the stuffed mushrooms on a baking sheet.
  9. Bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
  10. Serve hot.

Notes

  • For extra flavor, you can finely chop the mushroom stems and add them to the filling mixture.
  • If you prefer a crispier topping, broil the mushrooms for the last 1-2 minutes of baking, watching carefully to prevent burning.
  • These can be assembled ahead of time and baked just before serving.
