1 pound fresh green beans, trimmed
2 tablespoons high-heat oil (like avocado or grapeseed)
4 cloves garlic, minced
1 teaspoon red pepper flakes (or to taste)
1 tablespoon soy sauce
1 teaspoon rice vinegar
1/2 teaspoon sesame oil
Optional: 1/2 teaspoon chili-garlic paste
Instructions
Pat the green beans completely dry with paper towels. This is crucial for achieving a blistered texture.
Heat the oil in a large skillet or wok over high heat until shimmering.
Add the green beans in a single layer. Cook for 3-5 minutes without stirring, until the undersides are blistered and browned.
Stir the green beans and continue cooking for another 3-5 minutes, stirring occasionally, until tender-crisp.
Push the green beans to one side of the skillet. Add the minced garlic and red pepper flakes to the empty side. Cook for about 30 seconds until fragrant, stirring constantly.
Add the soy sauce, rice vinegar, and sesame oil (and chili-garlic paste, if using) to the skillet. Stir everything together to coat the green beans.
Cook for another minute until the sauce thickens slightly and coats the beans.
Serve immediately.
Notes
For extra heat, add more red pepper flakes or a pinch of Sichuan peppercorns.
If you don’t have a wok, a cast-iron skillet works well.
Ensure your skillet is very hot before adding the beans to get the best sear.
