  • 1 teaspoon granulated sugar

Instructions

  1. In a large bowl, combine warm water, yeast, and sugar. Let stand for 5-10 minutes until foamy.
  2. Add flour and salt to the yeast mixture. Mix until a shaggy dough forms.
  3. Add melted butter and knead on a lightly floured surface for 5-7 minutes, or until the dough is smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for 30 minutes.
  5. While the dough rises, preheat your oven to 425°F (220°C). Prepare the baking soda bath by combining 6 cups of water and ⅔ cup of baking soda in a large pot. Bring to a simmer.
  6. Punch down the risen dough and divide it into 4 equal portions. Roll each portion into a rope about ½ inch thick. Cut the ropes into 1-inch pieces.
  7. Working in batches, drop the pretzel bites into the simmering baking soda bath for 30 seconds. Remove with a slotted spoon and place on a baking sheet lined with parchment paper.
  8. Sprinkle with coarse salt or cinnamon sugar, if desired.
  9. Bake for 10-15 minutes, or until golden brown.
  10. Serve warm with your favorite dipping sauces.
