Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8 inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, and salt for the batter.
  3. In a separate bowl, mix the melted butter, 1 cup of granulated sugar, egg, and vanilla extract until combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined into a thick batter. Do not overmix.
  5. Spread the batter evenly into the prepared baking dish.
  6. In a small bowl, combine the remaining 1 cup of granulated sugar and the ground cinnamon for the topping. Mix well.
  7. Sprinkle the cinnamon-sugar mixture evenly over the batter in the baking dish.
  8. Carefully pour 1 cup of boiling water over the entire surface of the cobbler. The water will seep down and create the gooey sauce.
  9. Bake for 30 to 35 minutes, or until the top is golden brown and the edges are set. The center will remain very gooey.
  10. Remove from the oven and let it cool slightly before serving. Serve warm with vanilla ice cream or caramel sauce.
