Easy Slow Cooker Red Beans and Rice with Smoked Sausage

Prepare authentic, hearty Cajun Red Beans and Rice using your slow cooker. This set it and forget it recipe requires minimal prep time and delivers rich, comforting flavor perfect for weeknight dinners.

  • 1 pound dried small red kidney beans, rinsed
  • 1 pound smoked andouille sausage, sliced
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 6 cups low-sodium chicken broth or water
  • 1 bay leaf
  • Salt and black pepper to taste
  • Cooked white rice, for serving

Instructions

  1. Place the rinsed red kidney beans, sliced andouille sausage, onion, bell pepper, celery, garlic, thyme, smoked paprika, oregano, and cayenne pepper (if using) into the basin of your slow cooker.
  2. Pour the chicken broth or water over the ingredients. Add the bay leaf.
  3. Stir everything together gently to combine.
  4. Cover the slow cooker and cook on LOW for 7 to 8 hours or on HIGH for 3 to 4 hours.
  5. About 30 minutes before serving, remove and discard the bay leaf. Taste the mixture and add salt and black pepper as needed. The beans should be tender and creamy.
  6. Serve the red beans and sausage mixture hot over cooked white rice.

Notes

  • For a thicker consistency, mash about 1 cup of the beans against the side of the slow cooker with a spoon before serving.
  • If you do not have smoked andouille sausage, you can substitute smoked ham hocks or smoked turkey sausage.
  • Soaking the beans overnight is optional but helps reduce cooking time slightly. If you soak them, reduce the cooking time by about 1 hour on LOW.
