3 lb pork shoulder roast
1 (32 ounce) bag sauerkraut, drained
2 large apples, cored and sliced
1 large yellow onion, sliced
1 cup chicken broth
1 tablespoon brown sugar
1 teaspoon caraway seeds
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Place the sliced onion on the bottom of your slow cooker insert.
Place the pork roast on top of the onions.
In a bowl, mix the drained sauerkraut, sliced apples, chicken broth, brown sugar, caraway seeds, salt, and pepper.
Spoon the sauerkraut and apple mixture evenly over the pork roast.
Cover the slow cooker and cook on low for 7 to 8 hours, or on high for 4 to 5 hours, until the pork is very tender.
Remove the pork roast from the slow cooker and shred it using two forks.
Return the shredded pork to the slow cooker and stir it into the sauerkraut mixture.
Serve hot. This makes a great New Year’s good luck meal.
Notes
For a richer flavor, you can sear the pork roast on all sides in a hot skillet with a little oil before placing it in the slow cooker.
If you prefer less tang, rinse the sauerkraut lightly before using it in the recipe.
This dish pairs well with mashed potatoes or rye bread to soak up the cooking liquid.
