1 tablespoon olive oil
1 pound Italian sausage, casings removed
1 small yellow onion, chopped
2 cloves garlic, minced
1 (15 ounce) container ricotta cheese
1 large egg
1/4 cup grated Parmesan cheese, plus more for topping
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (24 ounce) jar marinara sauce
1 (14.5 ounce) can diced tomatoes, undrained
12 lasagna noodles, broken into 2-inch pieces
4 cups water
2 cups shredded mozzarella cheese
Instructions
Heat olive oil in a large, deep skillet (12-inch recommended) over medium heat. Add sausage and cook, breaking it up with a spoon, until browned. Drain excess grease.
Add onion to the skillet and cook until soft, about 4 minutes. Add garlic and cook for 1 minute more until fragrant.
In a medium bowl, mix together the ricotta cheese, egg, 1/4 cup Parmesan cheese, Italian seasoning, salt, and pepper until combined. Set aside.
Pour the marinara sauce, diced tomatoes (with juice), broken lasagna noodles, and water into the skillet with the sausage mixture. Stir well to combine.
Bring the mixture to a boil over medium-high heat. Once boiling, reduce heat to low, cover the skillet, and simmer for 10 to 12 minutes, stirring occasionally to prevent the noodles from sticking. The noodles should be tender.
Remove the skillet from the heat. Drop spoonfuls of the ricotta mixture evenly over the top of the pasta mixture.
Sprinkle the mozzarella cheese over the top layer. Cover the skillet again and let it sit off the heat for 5 minutes, allowing the cheese to melt and the ricotta to heat through.
Remove the lid, sprinkle with extra Parmesan cheese, and serve directly from the skillet.
Notes
For a beef version, substitute ground beef for the Italian sausage.
If you do not have lasagna noodles, you can substitute with 8 ounces of broken ziti or penne pasta. Adjust water slightly if needed.
This recipe is great for minimal cleanup dinner preparation.
