1 large onion, chopped
2 carrots, peeled and diced
2 celery stalks, diced
1.5 pounds ground beef
1 teaspoon salt
0.5 teaspoon black pepper
2 tablespoons all-purpose flour
1 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 pounds potatoes, peeled and quartered
0.5 cup milk
0.25 cup butter
0.5 teaspoon salt
0.25 teaspoon black pepper
Instructions
Preheat your oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat. Add onion, carrots, and celery. Cook until softened, about 8-10 minutes.
Add ground beef to the skillet. Break it apart with a spoon and cook until browned. Drain excess fat.
Season the beef mixture with salt and pepper. Sprinkle flour over the meat and stir to coat. Cook for 1 minute.
Gradually stir in beef broth, Worcestershire sauce, thyme, and rosemary. Bring to a simmer and cook until the sauce has thickened, about 5 minutes.
While the meat mixture simmers, place potatoes in a large pot and cover with cold water. Add 0.5 teaspoon salt. Bring to a boil and cook until potatoes are tender, about 15-20 minutes.
Drain the potatoes well. Return them to the pot. Add milk, butter, 0.5 teaspoon salt, and 0.25 teaspoon pepper. Mash until smooth and creamy.
Pour the meat mixture into a 9×13 inch baking dish.
Spread the mashed potatoes evenly over the meat mixture. Use a fork to create texture on top.
Bake for 20-25 minutes, or until the potato topping is golden brown and the filling is bubbly.
Let stand for 5-10 minutes before serving.
Notes
For a richer flavor, use a combination of ground beef and ground lamb.
Add frozen peas or corn to the meat mixture for extra vegetables.
Top the mashed potatoes with shredded cheddar cheese before baking for a cheesy crust.
