  • 3 large sweet potatoes, scrubbed and cut into 1-inch cubes or wedges
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
  2. Place the cut sweet potatoes into a large bowl.
  3. Drizzle the sweet potatoes with olive oil. Toss them well to coat every piece evenly.
  4. In a small bowl, mix together the salt, pepper, garlic powder, and paprika.
  5. Sprinkle the seasoning mix over the oiled sweet potatoes. Toss again until the seasoning adheres to all the cubes.
  6. Spread the seasoned sweet potatoes onto the prepared baking sheet in a single layer. Do not overcrowd the pan; use two sheets if necessary to ensure crispiness.
  7. Roast for 25 to 35 minutes, flipping the potatoes halfway through the cooking time. The potatoes are done when they are fork-tender and have developed dark, caramelized, crispy edges.
  8. Remove from the oven and serve immediately as your best sweet potato side.

Notes

  • For extra caramelization, toss the potatoes with 1 tablespoon of maple syrup before adding the dry spices.
  • To achieve the crispiest roasted sweet potatoes, make sure the potatoes are in a single layer on the baking sheet. Crowding traps steam and prevents browning.
