Make this creamy, light ricotta dip in under 10 minutes. It combines sweet honey, fresh thyme, and a hint of lemon for an elegant, easy appetizer perfect for any gathering.

Ingredients

Scale
  • 15 ounces whole milk ricotta cheese, drained if very wet
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons honey, plus extra for drizzling
  • 1 teaspoon fresh thyme leaves
  • Optional: Pinch of red pepper flakes for heat
  • For serving: Crusty bread, pita chips, or fresh vegetables

Instructions

  1. Place the drained ricotta cheese, olive oil, lemon juice, salt, and pepper into the bowl of a food processor.
  2. Process the mixture for 1 to 2 minutes, stopping to scrape down the sides as needed, until the ricotta is completely smooth, light, and fluffy.
  3. Transfer the whipped ricotta dip to a shallow serving bowl.
  4. Drizzle the top generously with the 2 tablespoons of honey.
  5. Sprinkle the fresh thyme leaves and red pepper flakes (if using) over the honey.
  6. Serve immediately with your choice of bread or vegetables for dipping.

Notes

  • If you do not have a food processor, you can use a stand mixer with the whisk attachment or a hand mixer. Beat the ingredients on medium-high speed until smooth, about 3 minutes.
  • For a savory variation, replace the honey drizzle with high-quality olive oil and finely minced garlic.
  • Drain the ricotta for at least 30 minutes in a fine-mesh sieve lined with cheesecloth if it seems watery; this prevents a thin dip.
