Make soft and chewy red velvet cookies fast using only four simple ingredients and a boxed cake mix. These quick cookies are perfect for holidays or any time you need a simple, delicious shortcut dessert.

Ingredients

Scale
  • 1 box (15.25 ounces) red velvet cake mix
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup white chocolate chips (optional, for bakery style)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a medium bowl, combine the entire box of red velvet cake mix, the melted butter, and the egg. Mix with a spoon or spatula until just combined into a thick dough. Do not overmix.
  3. If using, gently fold in the white chocolate chips.
  4. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  5. Bake for 8 to 10 minutes. The edges should look set, but the centers will still look slightly soft.
  6. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a crinkle cookie look, roll the dough balls in powdered sugar before placing them on the baking sheet.
  • If you prefer thicker cookies, chill the dough for 30 minutes before scooping.
  • These cookies freeze well after baking. Store them in an airtight container for up to three months.
