2 large bell peppers (any color), sliced
1 large red onion, sliced
2 tablespoons olive oil
1 tablespoon lime juice, fresh
2 teaspoons chili powder
1 teaspoon cumin

1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
In a medium bowl, combine the sliced peppers and onion. Drizzle with 1 tablespoon of olive oil and toss to coat. Spread the vegetables in a single layer on the prepared baking sheet.
In the same bowl, combine the shrimp, remaining 1 tablespoon of olive oil, lime juice, chili powder, cumin, smoked paprika, salt, and pepper. Toss until the shrimp is evenly coated.
Arrange the seasoned shrimp on the baking sheet among the vegetables, ensuring everything is in a single layer.
Bake for 10 to 12 minutes, or until the shrimp is pink and cooked through and the vegetables are tender-crisp.
Remove from the oven. Squeeze a little extra fresh lime juice over the top if desired.
