Ingredients

  • 1 cup milk (dairy or plant-based)
  • 2 tablespoons pumpkin puree (not pumpkin pie filling)
  • 2 tablespoons granulated sugar (adjust to taste)
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • 1/4 cup strong brewed coffee or 12 shots of espresso
  • Whipped cream and extra spice for topping (optional)

Instructions

  1. Combine the milk, pumpkin puree, sugar, pumpkin pie spice, and vanilla extract in a small saucepan.
  2. Heat the mixture over medium heat, stirring constantly until it is hot and steaming, but do not let it boil.
  3. Remove the saucepan from the heat. Whisk the mixture vigorously until it is smooth and slightly frothy.
  4. If you prefer a very smooth texture, you can strain the mixture through a fine-mesh sieve to remove any pumpkin solids.
  5. Pour the strong coffee or espresso into your mug.
  6. Pour the heated pumpkin milk mixture over the coffee.
  7. Top your Homemade PSL with whipped cream and a light sprinkle of extra pumpkin pie spice.

Notes

  • For a quicker version, combine all ingredients except coffee in a microwave-safe jar and microwave until hot, then shake well before adding to coffee.

  • To make a DIY PSL Syrup base for future use, combine 1/2 cup pumpkin puree, 1/2 cup water, 1/2 cup sugar, and 1 tablespoon pumpkin pie spice. Simmer until thickened, then strain and store in the refrigerator for up to two weeks. Use 2-3 tablespoons of syrup per latte.
