  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup heavy cream
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup crushed cornflakes (for topping)
  • 4 tablespoons butter, melted (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the thawed hash browns, cream of chicken soup, sour cream, heavy cream, 1/2 cup melted butter, salt, pepper, and garlic powder. Mix until everything is evenly coated.
  3. Stir in 1 1/2 cups of the shredded cheddar cheese into the potato mixture.
  4. Spread the potato mixture evenly into the prepared baking dish.
  5. In a small bowl, combine the crushed cornflakes with the remaining 4 tablespoons of melted butter. Sprinkle this mixture evenly over the top of the casserole.
  6. Bake for 45 minutes.
  7. Remove the casserole from the oven and sprinkle the remaining 1/2 cup of cheddar cheese over the top. Return to the oven and bake for another 10 to 15 minutes, or until the cheese is melted and bubbly and the topping is golden brown.
  8. Let the potato casserole rest for 10 minutes before serving.

  • For a make ahead potato bake, assemble the casserole completely (without the topping) and cover it tightly. Refrigerate for up to 24 hours. Add 10-15 minutes to the initial baking time if baking directly from the refrigerator.
