A simple and flavorful roasted pork tenderloin recipe, perfect for an elegant dinner or a weeknight meal. This lean cut cooks quickly and stays juicy.

  • 1.5 lb pork tenderloin
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the pork tenderloin dry with paper towels.
  3. In a small bowl, mix together olive oil, minced garlic, rosemary, thyme, salt, and pepper.
  4. Rub the herb and garlic mixture all over the pork tenderloin.
  5. Place the pork tenderloin in a roasting pan or on a baking sheet.
  6. Roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare, or 160°F (71°C) for medium.
  7. Let the pork tenderloin rest for 5-10 minutes before slicing.

  • For an even more flavorful crust, you can sear the tenderloin on all sides in a hot skillet before roasting.
  • This recipe is easily adaptable; feel free to use other herbs like sage or oregano.
