  • 4 large eggs

  • For the Frosting:
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 1/4 cup milk
  • 1 teaspoon peppermint extract
  • 23 drops green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the paper.
  2. In a large bowl, whisk the melted butter and granulated sugar together until fully combined.
  3. Whisk in the eggs one at a time until the mixture is smooth and glossy. Stir in the vanilla extract and peppermint extract.
  4. In a separate bowl, whisk together the cocoa powder and flour. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Fold in the chocolate chips. Spread the brownie batter evenly into the prepared baking pan.
  6. Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter. Let the brownies cool completely in the pan on a wire rack.
  7. To make the frosting, beat the softened butter in a medium bowl until creamy. Gradually add the sifted powdered sugar, alternating with the milk, beating until smooth.
  8. Mix in the peppermint extract and food coloring, if using. Beat until the frosting is light and fluffy.
  9. Once the brownies are completely cool, spread the peppermint frosting evenly over the top.
  10. Sprinkle the crushed candy canes over the frosting immediately.
  11. Let the frosting set for about 30 minutes before cutting the peppermint brownies into squares.
