  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans, toasted
  • 1/2 cup light corn syrup
  • 1/4 cup packed light brown sugar
  • 1/4 cup unsalted butter
  • 1/2 cup chopped pecans, toasted

Instructions

  1. In a large bowl, beat the softened cream cheese and softened butter together until smooth.
  2. Add the powdered sugar, 1/4 cup brown sugar, vanilla extract, and salt. Beat until the mixture is fully combined and creamy.
  3. Stir in the first 1/2 cup of toasted pecans. Transfer the dip mixture to a serving bowl.
  4. For the topping, combine the corn syrup, 1/4 cup brown sugar, and 1/4 cup butter in a small saucepan over medium heat. Stir constantly until the butter melts and the mixture is smooth. Do not boil.
  5. Remove the topping mixture from the heat and stir in the remaining 1/2 cup of toasted pecans.
  6. Spoon the warm pecan topping evenly over the cream cheese base.
  7. Chill the dip for at least 1 hour before serving to allow it to set.

Notes

  • Serve this dip chilled or at room temperature with graham crackers, apple slices, vanilla wafers, or pretzels.
  • You can toast the pecans in a dry skillet over medium heat for 3-5 minutes until fragrant.
  • Make this dip ahead of time; cover and refrigerate for up to 2 days. Allow it to sit out for 15 minutes before serving if chilled too long.
