  • 1 cup chopped yellow onion (about 1 medium)
  • 2 cloves garlic, minced
  • 4 cups broccoli florets (from about 1 lb broccoli)

  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/4 teaspoon nutmeg
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Optional: 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

  • Optional: Low-sodium chicken broth for a lighter version

Instructions

  1. Melt butter in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  2. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Add the broccoli florets and chicken broth to the pot. Bring to a boil, then reduce heat, cover, and simmer for 10-15 minutes, or until the broccoli is tender.
  4. Carefully transfer about half of the soup mixture to a blender or use an immersion blender to puree until smooth. Return the pureed mixture to the pot.
  5. Stir in the half-and-half, salt, pepper, and nutmeg.
  6. Gradually stir in the shredded cheddar and Monterey Jack cheeses until melted and the soup is smooth. Do not boil after adding cheese.
  7. If the soup is not as thick as you like, stir in the cornstarch slurry and cook for 1-2 minutes until thickened.
  8. Taste and adjust seasoning if needed. If using extra broccoli, add it now and cook for a few more minutes until tender.
  9. Serve hot, optionally in a bread bowl.
