1/2 cup milk
1/4 cup unsweetened cocoa powder
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
3 cups quick-cooking oats
Instructions
Combine sugar, butter, milk, and cocoa powder in a medium saucepan.
Bring the mixture to a rolling boil over medium heat. Boil for exactly 60 seconds, stirring constantly.
Remove the saucepan from the heat. Stir in the peanut butter and vanilla extract until smooth.
Add the quick-cooking oats and stir until well combined.
Drop rounded tablespoons of the mixture onto wax paper or parchment paper.
Let the cookies cool and set for about 30 minutes, or until firm.
Notes
Using quick-cooking oats helps the cookies set properly. Old-fashioned oats may result in a softer cookie.
