Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper circles.
In a very large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Beat with an electric mixer on medium speed for two minutes, scraping down the sides of the bowl as needed.
Carefully pour the hot water or hot coffee into the batter and mix on low speed until just combined. The batter will be thin. This step activates the cocoa for deep flavor.
If using, stir in the chocolate chips by hand.
Divide the batter evenly between the prepared cake pans.
Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
