A simple, one-bowl recipe for moist and flavorful banana bread, perfect for using up ripe bananas. This classic quick bread is a comforting treat for breakfast or snacks.

  • 3 very ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the baking soda, salt, sugar, beaten egg, and vanilla extract. Stir until well combined.
  5. Fold in the flour until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50 minutes to 1 hour, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
