  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 12 ounces penne or rigatoni pasta
  • 1/4 cup fresh basil, chopped (for garnish)

Instructions

  1. Season the chicken pieces with smoked paprika, garlic powder, Italian seasoning, salt, and pepper.
  2. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  3. Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the chopped sun-dried tomatoes and cook for 1 minute until fragrant.
  4. Add the minced garlic and cook for about 30 seconds until you smell it; do not let it burn.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
  6. Stir in the heavy cream and bring the mixture to a gentle simmer.
  7. Add the dry pasta directly to the skillet. Stir well to coat.
  8. Cover the skillet and cook according to the pasta package directions, stirring every few minutes to prevent sticking, until the pasta is al dente and most of the liquid is absorbed, about 10-12 minutes.
  9. Stir the grated Parmesan cheese into the sauce until smooth and creamy.
  10. Return the cooked chicken to the skillet and stir to combine and heat through.
  11. Taste and adjust seasoning with salt and pepper if needed.
  12. Serve immediately topped with fresh basil and extra Parmesan cheese.
