Create a crowd-pleasing tray of loaded nachos with seasoned ground beef, melted cheese, and all your favorite toppings for a perfect movie night snack.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 bag tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn, drained
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • Optional toppings: sour cream, salsa, guacamole, sliced jalapeños

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
  4. Spread tortilla chips in a single layer on a large baking sheet.
  5. Spoon the seasoned ground beef mixture evenly over the chips.
  6. Sprinkle the shredded cheddar and Monterey Jack cheeses over the beef.
  7. Scatter the black beans, corn, and red onion over the cheese.
  8. Bake for 8-10 minutes, or until the cheese is melted and bubbly.
  9. Remove from oven and sprinkle with fresh cilantro.
  10. Serve immediately with your favorite optional toppings.

Notes

  • For an extra cheesy nacho experience, add a layer of cream cheese before baking.
  • You can substitute ground turkey or chicken for the ground beef.
  • Make it vegetarian by omitting the meat and adding extra beans and vegetables.
