A creamy and hearty soup that tastes like a loaded baked potato, perfect for a comforting meal.

  • 1 tablespoon olive oil
  • 1 pound bacon, chopped
  • 1 cup chopped yellow onion (about 1 medium)
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 6 cups chicken broth
  • 2 pounds Russet potatoes, peeled and diced
  • 2 cups milk
  • 1 cup heavy cream
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh chives

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add bacon and cook until crisp. Remove bacon with a slotted spoon and set aside, leaving drippings in the pot.
  2. Add chopped onion to the pot and cook until softened, about 5-7 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  3. Sprinkle flour over the onions and garlic. Cook, stirring constantly, for 1-2 minutes to create a roux.
  4. Gradually whisk in chicken broth, ensuring no lumps form. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
  5. Add diced potatoes to the pot. Bring back to a simmer, then reduce heat, cover, and cook for 15-20 minutes, or until potatoes are tender.
  6. Use an immersion blender to partially blend the soup, leaving some potato chunks for texture. Alternatively, carefully transfer about half the soup to a regular blender, blend until smooth, and return to the pot.
  7. Stir in milk and heavy cream. Heat gently over medium-low heat until warmed through. Do not boil.
  8. Stir in shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.
  9. Ladle soup into bowls. Garnish with reserved cooked bacon, a dollop of sour cream, and chopped chives.

Notes

  • For a lighter version, substitute half-and-half for heavy cream and plain Greek yogurt for sour cream.
  • You can also add cooked, crumbled sausage or ham for extra flavor.
  • Consider a topping bar with options like extra shredded cheese, sour cream, chives, crispy fried onions, or jalapeños.
  • This soup can be made ahead and reheated gently.
