  • 1/2 cup coconut oil, melted
  • 1/2 cup powdered keto-friendly sweetener (like erythritol or monk fruit blend)
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract

Instructions

  1. Line an 8×4 inch loaf pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium microwave-safe bowl, combine the melted coconut oil and peanut butter. Microwave in 30-second intervals, stirring in between, until completely smooth and combined.
  3. Whisk the powdered keto sweetener and cocoa powder into the peanut butter mixture until no lumps remain.
  4. Stir in the vanilla extract until fully incorporated. The mixture will be thick.
  5. Pour the fudge mixture into the prepared loaf pan and spread it evenly using a spatula.
  6. Place the pan in the freezer for at least 2 hours, or until the fudge is firm.
