Make this easy, low carb chicken and zucchini stir fry for a fast weeknight dinner that fits your ketogenic diet perfectly. It uses simple ingredients and a savory, sugar-free sauce.

  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 medium zucchini, halved lengthwise and sliced
  • 1 tablespoon avocado oil or sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup tamari or coconut aminos (for low sodium/soy-free)
  • 2 tablespoons water
  • 1 tablespoon rice vinegar (ensure it is not seasoned)
  • 1 teaspoon erythritol or monk fruit sweetener (optional, for balance)
  • 1/2 teaspoon xanthan gum (optional, for thickening)
  • Salt and black pepper to taste
  • 1 tablespoon sesame seeds, for garnish

Instructions

  1. Season the cut chicken pieces lightly with salt and pepper.
  2. Heat the avocado oil in a large skillet or wok over medium-high heat.
  3. Add the chicken to the hot skillet and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  4. Add the minced garlic and grated ginger to the same skillet. Cook for about 30 seconds until fragrant. Do not let the garlic burn.
  5. Add the sliced zucchini to the skillet. Stir fry for 3 to 4 minutes until the zucchini is tender-crisp. You want it cooked but still holding its shape.
  6. While the zucchini cooks, whisk together the tamari (or coconut aminos), water, rice vinegar, and sweetener (if using) in a small bowl.
  7. Return the cooked chicken to the skillet with the zucchini.
  8. Pour the sauce mixture over the chicken and vegetables. Stir constantly for 1 minute to coat everything.
  9. If you want a thicker sauce, sprinkle the xanthan gum over the mixture while stirring rapidly. Cook for another minute until the sauce thickens slightly.
  10. Taste and adjust seasoning with more salt or pepper if needed.
  11. Serve immediately, garnished with sesame seeds. This is a great low net carb zucchini recipe.

Notes

  • For a different flavor profile, substitute the tamari/coconut aminos with 3 tablespoons of sugar-free peanut sauce base.
  • If you are looking for a base other than cauliflower rice, serve this keto stir fry recipe over shirataki noodles or simply enjoy it as is.
