12 large jalapeño peppers
8 ounces cream cheese, softened
4 ounces shredded cheddar cheese
2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
12 slices bacon, cut in half
Instructions
Preheat your oven to 400°F (200°C).
Slice the jalapeño peppers in half lengthwise and remove the seeds and membranes.
In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, minced garlic, salt, and pepper. Mix well.
Spoon the cheese mixture evenly into each jalapeño half.
Wrap each stuffed jalapeño half with a half-slice of bacon. Secure with a toothpick if needed.
Place the wrapped jalapeños on a baking sheet lined with parchment paper.
Bake for 20-25 minutes, or until the bacon is crispy and the jalapeños are tender.
Remove from oven and let cool slightly before serving.
Notes
For milder poppers, remove all seeds and membranes. For spicier poppers, leave some seeds in.
You can substitute Monterey Jack cheese for cheddar.
