  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 1/4 cup hot honey (or regular honey mixed with 1/2 teaspoon red pepper flakes)
  • 1 tablespoon apple cider vinegar
  • 4 ounces feta cheese, crumbled
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 Celsius). Lightly grease a baking dish or heat the olive oil in an oven-safe skillet over medium-high heat.
  2. Pat the chicken breasts dry. In a small bowl, mix the salt, pepper, garlic powder, and smoked paprika. Rub this seasoning mix evenly over both sides of the chicken breasts.
  3. If using a skillet, sear the chicken for 3 minutes per side until golden brown. If baking only, skip to step 4.
  4. In a small bowl, whisk together the hot honey and apple cider vinegar to create the glaze.
  5. Place the chicken in the prepared baking dish or transfer the skillet to the oven. Brush half of the hot honey glaze over the chicken.
  6. Bake for 15 minutes. Remove from the oven, brush with the remaining glaze, and top evenly with the crumbled feta cheese.
  7. Return the chicken to the oven and bake for another 5 to 8 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 Celsius) and the feta is slightly softened.
  8. Remove from the oven. Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley.

Notes

  • To make this a crispy hot honey feta chicken, lightly dredge the seasoned chicken in flour before searing in the skillet.
  • If you do not have hot honey, mix 1/4 cup of regular honey with 1/2 teaspoon of cayenne pepper or red pepper flakes.
