1/4 cup honey
1/4 cup soy sauce
2 tbsp rice vinegar
1 tbsp sesame oil
3 cloves garlic, minced
1 tsp grated fresh ginger
1/2 tsp red pepper flakes (optional)
1 tbsp cornstarch
2 tbsp water
Salt and black pepper to taste

Instructions
Pat the chicken thighs dry with paper towels. Season with salt and pepper.
In a small bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes (if using).
Pour half of the sauce into a bowl and add the chicken thighs. Toss to coat. You can marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
In a small separate bowl, whisk together cornstarch and water to create a slurry.
Heat a large skillet over medium-high heat. Add the marinated chicken thighs in a single layer. Cook for 5-7 minutes per side, until browned and cooked through (internal temperature reaches 165°F).
Remove chicken from the skillet and set aside.
Pour the remaining sauce into the skillet. Bring to a simmer.
Whisk the cornstarch slurry into the simmering sauce. Cook, stirring constantly, until the sauce thickens into a glaze, about 1-2 minutes.
Return the chicken thighs to the skillet and toss to coat them in the glaze.
Serve immediately over cooked rice with steamed broccoli.
Notes
For a lacquered glaze without burning, ensure your heat is not too high when reducing the sauce. The honey can burn easily.
The sauce can double as a marinade. Marinating for longer will result in deeper flavor.
Boneless, skinless thighs cook faster than bone-in, skin-on thighs. Adjust cooking time accordingly.
