A simple and savory weeknight meal featuring tender chicken thighs coated in a sticky honey garlic glaze. This recipe is perfect for busy evenings and can be made in under an hour.

  • 1.5 lbs boneless, skinless chicken thighs
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1/2 tsp red pepper flakes (optional)
  • 1 tbsp cornstarch
  • 2 tbsp water
  • Salt and black pepper to taste
  • Cooked rice, for serving
  • Steamed broccoli, for serving

Instructions

  1. Pat the chicken thighs dry with paper towels. Season with salt and pepper.
  2. In a small bowl, whisk together honey, soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes (if using).
  3. Pour half of the sauce into a bowl and add the chicken thighs. Toss to coat. You can marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  4. In a small separate bowl, whisk together cornstarch and water to create a slurry.
  5. Heat a large skillet over medium-high heat. Add the marinated chicken thighs in a single layer. Cook for 5-7 minutes per side, until browned and cooked through (internal temperature reaches 165°F).
  6. Remove chicken from the skillet and set aside.
  7. Pour the remaining sauce into the skillet. Bring to a simmer.
  8. Whisk the cornstarch slurry into the simmering sauce. Cook, stirring constantly, until the sauce thickens into a glaze, about 1-2 minutes.
  9. Return the chicken thighs to the skillet and toss to coat them in the glaze.
  10. Serve immediately over cooked rice with steamed broccoli.

Notes

  • For a lacquered glaze without burning, ensure your heat is not too high when reducing the sauce. The honey can burn easily.
  • The sauce can double as a marinade. Marinating for longer will result in deeper flavor.
  • Boneless, skinless thighs cook faster than bone-in, skin-on thighs. Adjust cooking time accordingly.
  • This recipe is great for meal prep. Store cooked chicken and sauce separately if possible, and reheat gently.
