Make this easy Honey Garlic Chicken Stir Fry for a sweet and savory weeknight dinner. You get juicy chicken and crisp vegetables coated in a sticky glaze, ready in about 30 minutes.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon cornstarch
  • 1 tablespoon olive oil
  • 1 head of broccoli, cut into florets
  • 1 red bell pepper, sliced
  • 1 cup carrots, sliced or matchsticks
  • 3 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • Cooked rice or noodles, for serving
  • Green onions, sliced, for garnish

Instructions

  1. In a medium bowl, toss the cut chicken pieces with 1 tablespoon of cornstarch until lightly coated.
  2. Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  3. Add the broccoli, bell pepper, and carrots to the same skillet. Stir fry for 4 to 6 minutes until the vegetables are tender-crisp. Add the minced garlic during the last minute of cooking the vegetables.
  4. While the vegetables cook, whisk together the honey, soy sauce, rice vinegar, ground ginger, and red pepper flakes (if using) in a small bowl to create the sauce.
  5. Return the cooked chicken to the skillet with the vegetables. Pour the honey garlic sauce over the chicken and vegetables. Bring the mixture to a simmer.
  6. Stir the cornstarch and water slurry together again, then pour it into the simmering sauce. Stir constantly until the sauce thickens and becomes glossy, about 1 minute.
  7. Remove the skillet from the heat. Serve the honey garlic chicken stir fry immediately over rice or noodles, and garnish with sliced green onions.

Notes

  • For extra juicy chicken breast recipe results, do not overcrowd the pan when searing the chicken; cook in batches if necessary.
  • To ensure crisp vegetables, cook them quickly over high heat. If you prefer softer vegetables, add them earlier.
