Make this lightened up chicken salad that captures the creamy, spicy flavor of jalapeno poppers using Greek yogurt instead of heavy mayonnaise. This protein-packed recipe is perfect for a quick, healthy lunch or meal prep.

  • 2 cups cooked, shredded chicken breast
  • 1/2 cup plain non-fat Greek yogurt
  • 1/4 cup shredded reduced-fat cheddar cheese
  • 2 tablespoons finely diced fresh jalapeno (remove seeds for less heat)
  • 2 tablespoons finely diced red onion
  • 1 tablespoon fresh lime juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • Optional: 1/4 cup chopped fresh cilantro

Instructions

  1. Place the shredded chicken in a medium mixing bowl.
  2. In a separate small bowl, whisk together the Greek yogurt, reduced-fat cheddar cheese, diced jalapeno, red onion, lime juice, Dijon mustard, and garlic powder until smooth.
  3. Pour the dressing mixture over the shredded chicken.
  4. Gently fold the ingredients together until the chicken is evenly coated. Do not overmix.
  5. Season the salad with salt and pepper to your preference.
  6. If using, stir in the fresh cilantro.
  7. Cover the bowl and chill the chicken salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
