  • 2 Honeycrisp apples, cored and thinly sliced
  • 1 cup walnuts, toasted
  • 1/2 cup crumbled feta cheese
  • 1/4 cup dried cranberries
  • For the Maple Vinaigrette:
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Prepare the vinaigrette: In a small bowl, whisk together olive oil, apple cider vinegar, maple syrup, and Dijon mustard. Season with salt and pepper.
  2. Toast the walnuts: Spread walnuts on a baking sheet and toast in a preheated oven at 350°F (175°C) for 5-7 minutes, or until fragrant. Let cool.
  3. Assemble the salad: In a large bowl, combine mixed greens, sliced apples, toasted walnuts, feta cheese, and dried cranberries.
