  • 2 tablespoons rice vinegar
  • 1 tablespoon brown sugar (optional, for balance)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced, for garnish
  • 1 teaspoon sesame seeds, for garnish

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the ground chicken to the skillet. Break it up with a spoon and cook until it is fully browned and no pink remains, about 5 to 7 minutes. Drain any excess liquid or fat from the skillet.
  3. Add the chopped onion to the skillet and cook until softened, about 3 minutes.
  4. Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.
  5. Add the chopped zucchini to the skillet. Stir fry for 3 to 4 minutes until the zucchini is tender-crisp. You want it cooked but still holding its shape.
  6. In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar (if using), sesame oil, and red pepper flakes (if using). This is your simple zucchini ground meat sauce.
  7. Pour the sauce mixture over the chicken and vegetables. Toss everything together quickly, cooking for about 1 minute until the sauce thickens slightly and coats the ingredients.
  8. Remove the skillet from the heat. Garnish with sliced green onions and sesame seeds before serving.
