Easy and flavorful grilled shrimp skewers with a bright garlic-lemon marinade, perfect for a quick summer meal or appetizer.

  • 1.5 pounds large shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. In a medium bowl, whisk together olive oil, minced garlic, lemon juice, parsley, lemon zest, salt, and pepper.
  2. Add the shrimp to the marinade and toss to coat. Let marinate for 15-30 minutes in the refrigerator.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Thread the marinated shrimp onto the skewers, leaving a small space between each shrimp.
  5. Preheat your grill to medium-high heat.
  6. Lightly oil the grill grates.
  7. Place the shrimp skewers on the preheated grill.
  8. Grill for 2-3 minutes per side, or until the shrimp are pink and opaque and have grill marks.
  9. Remove from grill and serve immediately.

Notes

  • For extra flavor, you can add vegetables like bell peppers or onions to the skewers along with the shrimp.
  • Serve with extra lemon wedges for squeezing.
