Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 46 pita breads
  • For Tzatziki Sauce:
  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber, seeds removed and squeezed dry
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional Toppings:
  • Sliced tomatoes
  • Sliced red onion
  • Shredded lettuce
  • Feta cheese, crumbled

Instructions

  1. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken pieces and toss to coat. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  2. While the chicken marinates, prepare the tzatziki sauce. In a medium bowl, combine Greek yogurt, grated cucumber, dill, mint, minced garlic, and lemon juice. Season with salt and pepper to taste. Stir well and refrigerate until ready to serve.
  3. Preheat your grill to medium-high heat, or preheat your oven to 400°F (200°C).
  4. If grilling: Thread marinated chicken onto skewers. Grill for 8-10 minutes, turning occasionally, until cooked through and lightly charred.
  5. If baking: Spread marinated chicken in a single layer on a baking sheet. Bake for 15-20 minutes, or until cooked through and lightly browned.
  6. Warm the pita breads on the grill, in the oven, or in a dry skillet until soft and pliable.
  7. Assemble the gyros: Spread a generous amount of tzatziki sauce on a warm pita. Top with cooked chicken, tomatoes, red onion, lettuce, and feta cheese. Fold or roll the pita to serve.

Notes

  • For meal planning, you can marinate the chicken and make the tzatziki sauce a day in advance. Store them separately in the refrigerator.
  • This recipe is great for a crowd. Prepare all your toppings ahead of time and set up a gyro bar for everyone to customize their own wraps.
  • Serve with a side of Greek salad or roasted potatoes for a complete meal.
