Make comforting, classic chicken noodle soup easily in your slow cooker. This recipe is completely gluten-free and uses rice noodles to keep the texture perfect.

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 6 cups gluten-free chicken broth
  • 2 medium carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 medium yellow onion, chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces gluten-free rice noodles (or other gluten-free pasta)
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts or thighs into the bottom of your slow cooker.
  2. Add the carrots, celery, and onion around the chicken.
  3. Pour the gluten-free chicken broth over the ingredients.
  4. Stir in the dried thyme, rosemary, salt, and pepper. Add the bay leaf.
  5. Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is fully cooked and tender.
  6. Remove the chicken from the slow cooker and shred it using two forks. Discard the bay leaf.
  7. Return the shredded chicken to the slow cooker and stir to combine.
  8. About 30 minutes before serving, cook the gluten-free rice noodles according to package directions (usually boiling them separately). Do not add the noodles directly to the slow cooker unless you plan to eat all the soup immediately, as they will become mushy.
  9. Drain the cooked noodles and add them to the slow cooker, stirring gently.
  10. Ladle the soup into bowls and garnish with fresh parsley before serving.

Notes

  • Always check your chicken broth label to confirm it is certified gluten-free to avoid cross-contamination.
  • If you prefer a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir this slurry into the slow cooker during the last 30 minutes of cooking.
  • For a hands off chicken noodle soup experience, cook the noodles while the chicken shreds.
