1.5 lbs carrots, peeled and trimmed
2 tablespoons olive oil
2 tablespoons unsalted butter, melted
3 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
If using whole carrots, cut them into uniform pieces (about 3-4 inches long and 1/2 inch thick) for even cooking. If using baby carrots, you can leave them whole or cut larger ones in half lengthwise.
In a large bowl, toss the carrots with olive oil, melted butter, minced garlic, Italian seasoning, salt, and pepper until evenly coated.
Spread the carrots in a single layer on the prepared baking sheet. Ensure they are not overcrowded, as this can cause them to steam instead of roast.
Roast for 15 minutes.
Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese over the carrots.
Return the baking sheet to the oven and roast for another 5-10 minutes, or until the carrots are tender and lightly caramelized, and the Parmesan is melted and slightly golden.
Serve immediately.
Notes
For best results, cut carrots into uniform sizes.
Do not overcrowd the baking sheet to ensure proper roasting.
Add Parmesan cheese in the last 5-10 minutes of cooking to prevent it from burning.
Baby carrots can be used; adjust roasting time as needed.
These carrots can be made ahead and gently reheated in the oven.
