  • 1.5 lbs boneless, skinless chicken breasts, sliced in half horizontally to create thin cutlets
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried oregano
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the thin chicken cutlets evenly with salt, pepper, paprika, and oregano.
  2. Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
  3. Add the chicken to the hot skillet in a single layer. Cook for 4 to 5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.
  4. Reduce the heat to medium. Add the remaining 2 tablespoons of butter to the skillet. Add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic burn.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let the broth simmer and reduce slightly for 2 minutes.
  6. Stir in the heavy cream. Bring the sauce to a gentle simmer, then reduce the heat to low.
  7. Whisk in the grated Parmesan cheese until the sauce is smooth and thickened. Taste the sauce and add more salt or pepper if needed.
  8. Return the cooked chicken to the skillet. Spoon the sauce over the chicken. Let it simmer for 1 to 2 minutes to heat through.
  9. Garnish with fresh chopped parsley and extra Parmesan cheese before serving immediately.
