Make incredibly flavorful, savory garlic noodles in under 20 minutes. This recipe uses butter, fresh garlic, and umami boosters to create a sticky sauce perfect for a quick weeknight dinner or a satisfying side dish.

  • 1 pound dried noodles (spaghetti, linguine, or ramen work well)
  • 6 tablespoons unsalted butter
  • 1/4 cup fresh garlic, minced (about 1012 cloves)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional, for fusion flavor)
  • 2 tablespoons water (reserved from boiling noodles)
  • 1 tablespoon chopped fresh parsley or green onions, for garnish

Instructions

  1. Cook the noodles according to package directions until al dente. Before draining, reserve about 1/2 cup of the starchy cooking water. Drain the noodles and set them aside.
  2. While the noodles cook, prepare the sauce. In a large skillet or wok over medium heat, melt the butter.
  3. Add the minced fresh garlic to the melted butter. Cook for 1 to 2 minutes, stirring constantly, until the garlic is fragrant. Do not let the garlic brown or burn.
  4. Reduce the heat to low. Stir in the soy sauce, oyster sauce, hoisin sauce, sesame oil, and black pepper. Mix well to combine the sauce ingredients.
  5. Add the cooked, drained noodles to the skillet. Toss everything together to coat the noodles evenly with the garlic butter sauce.
  6. Add 2 tablespoons of the reserved noodle water to help create a slightly sticky sauce consistency. Toss for another minute.
  7. If using, remove the skillet from the heat and immediately toss in the grated Parmesan cheese until melted and incorporated.
  8. Serve the garlic noodles immediately. Garnish with fresh parsley or green onions.

Notes

  • For a main dish, toss in cooked shrimp, sliced chicken breast, or cubed tofu during the final step when adding the noodles.
  • If you prefer spicy garlic noodles, add 1 teaspoon of chili garlic sauce or red pepper flakes when you add the other sauces.
  • Use high-quality butter for the best flavor in this simple recipe.
